The ageing hall is in the central part of the building and completely underground, thus keeping conditions natural so that the wines can evolve in the best possible conditions. Here they can take in the tranquillity and monastic silence. Quite unusually, it does have natural light, thanks to a large window looking out to the north and a deep internal courtyard.
